I just had something very similar, and it was wonderful. I love the flavor that the apples add. The soup looks lovely in that bowl.

i made a similar soup last week and i didn’t skin my apples. i was a bit worried about the skins not blending but they turned very soft and the immersion blender worked fine! i would suggest making it with skins next time because that’s where most of the flavour is.
