		<description>The dish is fabulous! A company meal for everyday! Did not put the second set of cranberries in.  I prepared it three days before actually serving it with mashed potatoes and a herbed salad with a mustard dressing.  BTW, the strained cranberries make a good chutney-like accompaniment.  Thank you for the recipe.</description>

Maybe just use chicken broth, but enrich it with a chicken demi-glace (an enriched and reduced brown stock)?  Let me know what you end up using and if it worked for you.</description>
